When in doubt, run a ladder: two easy rounds to warm up, medium for the main game, and one hard round as the finale where the whole table collaborates. The audience difficulty works too: words are only as hard as the people guessing them, so a list of medium words can play easy at a trivia-loving table and hard at a casual one.
